Although it is a fairly young drink. Like any traditional dish, there are many variations of tea preparation. Tapioca is a starchy grain product obtained from the roots of cassava, a shrub that grows in tropical countries. Now we will teach you how to make tapioca starch crystals at home. These crystals are added to boiled and cooled green tea (oolong or jasmine are great for a more traditional taste). You can also add tapioca crystals to plant-based milk and sweeten with maple syrup. You can add them to iced coffee, cold cocoa, or even matcha latte. Sipping tapioca crystals with a straw will make you happy; they are similar in consistency to marmalade, so children especially like them. Here is the recipe: 1 cup boiling water 1 cup cane sugar 2 -2 1/2 cups tapioca starch First, you need to dissolve the sugar in the boiled water. Add the tapioca starch, stir until it is well dissolved. Place over low heat and stir constantly until the mixture becomes dough-like. Place the dough on a clean surface and knead well until it becomes very plastic. Shape the dough into 1cm diameter balls. Sprinkle the finished balls with a little tapioca starch and you can store them in an airtight container for later use. Life hack: Also try making a healthier version of the crystals without sugar, or use erythritol! How to make tapioca crystals? Put the required number of balls in boiling water (about 1 liter). Boil, stirring, over low heat, for about 30 minutes. Then, cover, turn off the heat and leave in this state for another 15 minutes. Take it out and check - if the balls have darkened, then they are ready. If the balls have not changed color, cook the tapioca for another 10-15 minutes. Then quickly pour into a colander and pour cold water to stop the foaming. Add to a pre-prepared cold drink. Traditionally, the drink is served with chilled sweet black tea, milk and ice. We recommend a healthier version of this tea. For adults – chilled matcha latte with coconut milk. For children – chilled cocoa in plant-based milk, with the addition of maple or date syrup. Remember, tapioca crystals, despite being an exotic addition to drinks, are a fairly high-calorie product (358 kcal per 100 g). Tapioca is useful in that it contains practically no fat, does not contain gluten, which is why it is suitable for baby food and people with gluten intolerance. Tapioca flour is also used as a thickener in sauces, clear glazes, and fruit desserts.
